DESCRIPTION:用味蕾重新品嚐那一刻，那一年被定焦的青春， \n回顧彼年的關渡 \n用味蕾再度記憶這一刻，這一道被料理的時光， \n品味今年的關渡 \nRelive the moment and the youthful memories of that year through your taste buds\,\nRevisit the flavors of Guandu. \nSavor the present moment and the taste of time in this dish\,\nExperience the essence of Guandu today. \n關渡美食地圖計畫 Guandu Food Map Project \n2021年，疫情籠罩，街巷間的煙火顯得寂靜，地方店家的生意隨之黯然。因此我們展開了「關渡美食地圖計畫」，拾起這片土地的味道，走訪了35間地方店家，一次次與老闆的溫度對話，用鏡頭定格每一道料理的精髓，捕捉那些隱藏在爐火背後的動人故事。透過這些照片與文字，將關渡的美味與情感推送到社群平台，讓關渡的故事在每一個人的心中流轉延續。 \n2024年，關渡宴體驗餐桌誕生了，承載著推廣地方店家的初心，希冀讓更多人感受這片土地的溫度與美好，並成為2024鬧熱關渡節的亮點活動之一。 \nIn 2021\, under the shadow of the pandemic\, the bustling streets of Guandu fell silent\, and local businesses faced declining sales. This inspired us to launch the “Guandu Food Map Project”. We set out to rediscover the flavors of this land\, visiting 35 local eateries\, engaging in heartfelt conversations with the owners\, capturing the essence of each dish\, and uncovering the stories hidden behind the stove. Through photos and words\, we shared the taste and emotions of Guandu on social platforms\, allowing its stories to resonate in people’s hearts. \nIn 2024\, the Guandu Feast Experience Table was born\, carrying forward the mission to promote local businesses. This unique dining experience has become one of the highlight events of the 2024 Noisy Guandu Festival\, offering guests a chance to savor the warmth and beauty of this land. \n回顧關渡美食地圖計畫 \n \n一場集結關渡地方料理的無菜單體驗餐桌 A Menu-Free Dining Experience Featuring Guandu’s Local Cuisine \n掀起鍋蓋，食物的香味伴隨著裊裊蒸氣慢慢的瀰漫開來，仿若是那一年繚繞在觀音山間的雲霧，陽光輕灑在戀人的臉頰上，孩子的笑聲迴盪在蜿蜒的巷弄裡，彼年的關渡，儘管模糊，仍舊佇立在記憶長河之中。 \n分不清誰才是真正的陪伴者，這片土地滋養著我，而我則繼續在這片土地上耕耘，我們相互的見證著故事的花開花落，從最初的一點一滴，到無數美好回憶的逐漸誕生，走過許多年頭，關渡仍在上演著酸、甜、苦、辣的各式故事，而我同樣也還在這裡，品味著這裡充滿無限風光的春、夏、秋、冬。 \nAs the lid lifts\, the aroma of food slowly wafts out with the rising steam\, reminiscent of the mist that once blanketed Guanyin Mountain. Sunlight gently touches the faces of lovers\, and children’s laughter echoes through the winding alleys. Though those days in Guandu may seem hazy\, they remain steadfast in our memories. \nIt’s hard to distinguish who is the true companion. This land has nurtured me\, and I\, in turn\, continue to cultivate it. Together\, we witness the blossoming and fading of stories\, from the smallest moments to the creation of countless beautiful memories. To bring travelers closer to traditional culture\, the tribe has meticulously planned a series of sumptuous feasts to welcome guests from afar. Light the fire and roast the pomelo-flavored chicken! Stuff the chicken with pomelo flesh soaked in fruit vinegar and wild vegetables\, then coat it with pomelo sauce and a touch of honey after roasting. The chicken meat becomes tender due to the pomelo vinegar\, and the light pomelo fragrance lingers in the mouth. \n \n搭配自製野菜麵包，沾上雞油，一口麵包、一口包裹著雞油的雞肉，不僅中和了油膩感，更突顯野菜淡香與雞肉清甜滋味。飯後再來杯酒釀冰淇淋，香氣微醺，每一口都讓人醉進心坎裡！ \nPaired with homemade wild vegetable bread dipped in chicken fat\, a bite of bread and a bite of chicken enveloped in chicken fat not only neutralize the greasiness but also highlight the delicate fragrance of wild vegetables and the sweetness of the chicken. End the meal with a cup of rice wine ice cream\, its aroma lightly intoxicating\, with every bite warming the heart! \n \n美食奇癒記／一舂一舂搗進你的心：酥烤雙色Toron Gourmet Healing Stories/ A Taste of Tradition: Crispy Roasted Two-tone Toron \nToron（麻糬），不僅是阿美族在儀式與節慶時常見的美食，更是族人們的共同記憶，相傳妻子在丈夫外出工作時，總會準備Toron，除填飽肚子外，也帶有盼望早歸及照顧家人的情意。將蒸熟的糯米飯趁著還有熱度時揉搗，Toron就會變得軟Q有彈性。把紫白雙色Toron放在烤網上小火慢烤，等到外皮酥脆、Toron膨脹後，沾上焦糖醬即可品嚐，口感緊實、香氣濃郁，甜而不膩的溫暖滋味讓人回味無窮。吃進嘴裡的，不僅僅是食物，更是這片田野中所蘊藏的美好。 \nToron (mochi) is not only a common delicacy during Amis rituals and festivals but also a shared memory among the tribe members. Traditionally\, wives would prepare Toron when their husbands went out to work\, hoping for their early return and showing care for their family. Knead the steamed glutinous rice while it’s still hot to make Toron soft and elastic. Grill the two-tone Toron over a small fire until the skin is crispy and it puffs up\, then dip it in caramel sauce. Its firm texture and rich aroma\, sweet but not cloying\, offer a comforting taste that lingers. In every bite\, you’ll find not just food but the hidden beauty of the fields. \n \n小米鞦韆野宴 Millet Swing Feast｜蓋亞那工作坊 Kaiana \n野宴時間 Time：8／24 18:30-20:00 \n票券售價 Fee：NT$800／人 \n從關山火車站循著道路往山邊前進，抵達位於崁顶的蓋亞那工作坊，陣陣小米香氣飄散在空氣中，抬頭就見一串串金黃。小米是布農族的重要作物，蓋亞那的故事更是從小米開始，無論生活、祭儀、文化，都依循著小米的開始與結束。Ibu說，餐桌上如果沒有小米，等於沒有來過布農族的餐桌吃飯；用一頓餐食的時間，感受崁頂布農文化的豐富底蘊。 \nFollow the road from Guanshan Train Station towards the mountains to reach the Gayana Workshop in Kanding\, where the air is filled with the scent of millet. Millet is a vital crop for the Bunun people\, and Gayana’s story begins with millet\, integral to their life\, rituals\, and culture. According to Ibu\, if there is no millet on the table\, it means you haven’t truly experienced a Bunun meal. Take the time to savor the rich cultural heritage of the Kanding Bunun community through this meal. \n \n今年的小米鞦韆野宴，以金黃香甜、口感Q彈的小米飯為主食，搭配煙燻梅花肉、炸野菜及涼拌過貓，食材看似簡單，也沒有過多調味，卻顯得那麼和諧，鹹香肉汁與野菜清甜在口中慢慢逸散，吃出土地原味、品味自然美好。甜點金銀花愛玉，用煮好的金銀花水仔細搓洗愛玉，凝固結凍後再另外添加蜂蜜檸檬水，聞起來帶點茉莉花香，入口酸甜清爽、齒頰留香；餐後喝杯小米酒康普茶（另有無酒精版），微酸口感及汽水般的氣泡感，不僅好喝也能幫助消化。 \nThis year’s Millet Swing Feast features golden\, sweet\, and chewy millet rice as the main dish\, paired with smoked pork\, fried wild vegetables\, and chilled ku-wan. The ingredients may seem simple and lack elaborate seasoning\, but they harmonize perfectly. The salty meat juice and the fresh sweetness of the wild vegetables slowly spread in your mouth\, allowing you to taste the original flavor of the land and appreciate nature’s beauty. For dessert\, enjoy gold and silver honeysuckle aiyu jelly\, meticulously made by rubbing aiyu seeds in honeysuckle water\, solidified and then mixed with honey lemon water. The fragrance of jasmine complements its sweet and refreshing taste. After the meal\, have a cup of millet wine kombucha (non-alcoholic version also available) to help with digestion\, with its slightly acidic and fizzy taste. \n \n美食奇癒記／用歲時曆描繪小米樣貌：小米麻糬 Gourmet Healing Stories/ The Timeless Art of Making Millet Mochi \n一顆顆鵝黃細小的小米粒來之不易，先用雙腳搓揉一番使小米脫粒後，再以搗杵一次次敲擊讓穀殼脫落，完全就是體力活。這次，讓我們自己搗麻糬自己吃，又黏又綿的小米麻糬，直接吃就是美味；也能串上竹籤火烤，蘸點油芒、焦糖醬，又是另一番滋味。 \nMillet grains are precious\, requiring laborious efforts to dehusk them by rubbing with feet and pounding with pestles. This time\, we’ll make and enjoy our own millet mochi. Learn about the wisdom of the elders\, the relationship between brewing and the tribe\, and cook glutinous rice using firewood. \n \n \n🌾跟著Ina做釀酒 體驗DIY Brewing with Ina – DIY Experience \n釀酒對於部落來說是為了延續文化，酒之於阿美族是神聖的，在從前糯米釀是很珍貴的，只有在重要的祭儀或是款待貴客的時候才會拿出來使用。\n釀酒方法從早期一代一代地流傳到現在，部落釀酒師都有自己的經驗和配方，跟著Ina製作糯米釀，在歌舞當中品嚐釀酒，還可以將製作好的糯米釀帶回家慢慢醞釀，待時機成熟即可享用。 \nFor the tribe\, brewing is a way to preserve culture. For the Amis\, rice wine is sacred. In the past\, glutinous rice brew was very precious and only used for important rituals or to entertain distinguished guests. The brewing method has been passed down from generation to generation. This event is a perfect choice for enjoying BBQ and karaoke with classmates! \nThose who have paid the department fee can attend both the BBQ and karaoke events for free. For those who haven’t paid the department fee\, there will be an additional charge: NT$200 for the BBQ and NT$50 for the karaoke. The BBQ requires registration in groups of 8-10 people\, while karaoke can be joined either solo or in pairs. Prizes will be awarded to the top three performers. \nEveryone is welcome to join and register for this early summer evening event.
