Japanese Masters Are Here! Miso × Rice Koji Brewing
DESCRIPTION:【味噌 Miso Making】 \n兩個時段 Two sessions： \n1/30（五 Fri）10:00~12:30（2.5hr）\n1/31（六 Sat）10:00~12:30（2.5hr） \n課程費用$3\,000包含 Course Fee: NT$3\,000 (includes)： \n\n老師來台教學費用／機票／住宿\n即時口譯專家費\n百年老店米麴\n有機黃豆、海鹽\n製作說明書\n3L提桶\n示範味噌餐點試吃\n課後每人可帶回「3公斤自製味噌」\n\n\n\nInstructor’s teaching fee in Taiwan / airfare / accommodation \n\n\nProfessional simultaneous interpretation \n\n\nRice koji from a century-old Japanese producer \n\n\nOrganic soybeans and sea salt \n\n\nStep-by-step instruction booklet \n\n\n3-liter fermentation bucket \n\n\nTasting of demonstration miso dishes \n\n\nEach participant may take home 3 kg of homemade miso \n\n\n是的，大豆、鹽、米麴就這簡簡單單的三樣，只要願意按步就班、耐心對待，『時間』就是那把祕密鑰匙，能開啟一份純粹的芬芳甘美滋味。 \nYes—just three simple ingredients: soybeans\, salt\, and rice koji. By following each step carefully and treating the process with patience\, time becomes the secret key that unlocks a pure\, fragrant\, and gently sweet flavor. \nWith a shy smile set aside\, Master Tetsuya speaks sincerely and earnestly: miso’s nutritional value is well known\, yet many people assume miso is an everyday staple in Japanese life and therefore easy to find. In reality\, it is rare to encounter truly pure\, additive-free miso in Japan—most commercial miso is made using accelerated methods. \nTo achieve a pleasing color\, vitamin B is added; to enhance sweetness\, amino acids are included; to extend shelf life\, alcohol is used to inhibit fermentation. For this reason\, he has spent years teaching people how to make miso\, with a simple wish: that more people are willing to make this uncomplicated food themselves\, so everyone can eat more healthily. \nMaster Tetsuya has a deep fondness for Taiwan. Observing its warm climate\, he firmly believes that the best season for making miso by hand in Taiwan is from late autumn to early spring. \n【釀酒 Rice Koji Brewing】 \n兩個時段 Two sessions： \n1/30（五 Fri）15:00~17:00（2hr）\n1/31（六 Sat）15:00~17:00（2hr） \n課程費用NT$3\,000包含 Course Fee: NT$3\,000 (includes)： \n\n老師來台教學費用／機票／住宿\n即時口譯專家費\n米麴／代蒸煮的米飯\n製作說明書\n2L玻璃瓶\n示範餐點試吃\n課後每人可帶回「一桶2.5公升瓶裝米酒」\n\n\n\nInstructor’s teaching fee in Taiwan / airfare / accommodation \n\n\nProfessional simultaneous interpretation \n\n\nRice koji / pre-steamed rice \n\n\nInstruction booklet \n\n\n2-liter glass bottle \n\n\nTasting of demonstration dishes \n\n\nEach participant may take home one 2.5-liter bottle of homemade rice koji \n\n\n2016年冬季首度邀請碇哲也師傅來簡單喜悅教導分享「自家の味噌製作」課程，老師的神秘嘉賓、摯友田村先生前來協助課程，這才知道田村先生既是調酒師也是釀酒師傅。 \nIn the winter of 2016\, Master Tetsuya Ikari was invited for the first time to teach and share the joy of “homemade miso making”. His surprise guest and close friend\, Mr. Tamura\, assisted with the class\, revealing that he is both a professional bartender and a skilled brewer. \nThis year’s Doburoku (cloudy rice wine) and amazake brewing course is different from previous years. It introduces a more advanced and enriched multi-stage fermentation method\, making it especially fascinating. Returning participants are warmly welcome to join and learn again! \n(Note: “Doburoku” refers to homemade unfiltered rice wine. In Japan\, alcohol production is still regulated under a government monopoly system.) \nIt is worth highlighting that Mr. Tamura uses Ikari-san’s rice koji for brewing. He has won first place in the Doburoku competition for two consecutive years\, and this year the runner-up was also claimed by one of his own apprentices—truly a joyful achievement. \nSinger Karamushi-san also performed live at the event. At such a moment\, what more could one ask for in life? \n(Note: Karamushi-san is from Atsugi\, Kanagawa\, and is Ikari-san’s elder brother. A powerful reggae vocalist who expresses the spirit of reggae through freestyle performance\, he advocates “ASIA UNITE”.) \nThis is a specially designed brewing course taught by Mr. Hiroshi Tamura\, guiding participants in how to use quality rice koji to brew rice wine by hand. Each participant will work alongside the instructor and may take home their own 2-liter bottle of homemade rice wine upon completion. A One-Person-One-Story Playback Theatre Workshop
\nThe English poet John Donne (1572–1631) once wrote\, “No man is an island.” \nAccording to British drama-in-education scholar J. W. Somers\, when participants learn through living through drama experiences\, they are able to empathize\, express their own ideas\, and help everyone present rediscover themselves. \nBy telling our own stories and listening to the stories of others\, people connect through resonance\, or develop mutual understanding through recognizing differences. \nOn the journey of exploring\, practicing\, reflecting on\, and studying open or polyamorous relationships\, we believe that any doubt\, struggle\, joy\, pressure\, or confusion is never faced alone. \nThis workshop invites you to join us—to share\, listen\, and witness those deeply personal yet universally resonant and healing moments. \nPlayback Theatre is a form of improvised\, community-interactive theatre. There is no set script; audience members offer their experiences and stories\, which the actors then interpret through improvisation\, creating shared moments that echo one life story after another. \nThis workshop includes an introduction to key concepts\, warm-up interactions\, Playback Theatre activities\, post-performance discussion\, and Q&A. It is not merely a performance to watch. Don’t worry—you won’t be required to perform. SUMMARY:2025書洞市集【無名祭 Festival of the Nameless】：沖繩傳統工藝 Okinawan Traditional Craft─紅型染工作坊 Bingata Dye Workshop
※當天會提供回家後的步驟指南） \n“Bingata Dyeing” is a traditional dyeing technique developed in Okinawa during 15th century. From stencil carving\, paste application\, coloring\, rinsing\, to drying\, every step of the process is intricate\, meticulous\, and full of creative fun. \nThe dyes used in Bingata are vibrant and natural — including vermilion\, crimson\, yellow ochre\, indigo\, and chalk white — all made by grinding plants and minerals into powder and mixing them with soybean extract. When coloring\, a short-bristled brush is used to apply one color at a time\, carefully brushing back and forth in thin layers to gradually build up hues on Japanese paper or fabric. \nBingata artist Asuka Nijigame will hold two sessions of the Bingata Dye Workshop at “Main Altar Mini Stage” of Book Cave Market. Participants can choose their favorite patterns and create their own hand-dyed placemat or tote bag. \n(The workshop will cover the coloring step only. \n“Taiwan Aesthetic” (대만감성) has recently surged in popularity on Korean social media. Everyday Taiwanese streetscapes—narrow arcades\, old signboards\, weathered brick walls—have captured the hearts of Korean youth\, who see in them a warm\, nostalgic and unpretentious aesthetic.
DESCRIPTION:當我們一起，那些難以言喻的美好才會發生 \nWhen we are together\, beauty beyond words unfolds. \nNow in its eighth year\, the PlayArts Festival continues to ask: What else can we play? How else can we gather? And how can a “place” become something open\, ever-evolving\, and unprescribed? These questions form the core method of the festival’s existence\, hoping that every gathering will spark a chemical reaction between audience and space\, artwork and body. This point of transformation is exactly what the festival seeks this year: the Sweet Spot. \nOriginally a sports term\, the “sweet spot” refers to the ideal point of contact with a ball—where force\, angle\, and speed align to create a perfect dynamic balance. But the “sweet spot” we seek is more than just a moment of impact. It’s not a one-way result\, but a state generated through encounters\, exchanges\, and the act of participation itself. \n“Some moments aren’t perfect\, but they land just right. That’s your sweet spot.” \nWe invite the audience to explore how art sparks in the process of playing and gathering. Between individual and collective\, control and chance\, we search for those just-right moments through the interaction between performer and viewer. \nThis year’s curation moves beyond simply watching—it starts with you. Your choices\, your rhythm\, and your senses may generate your own sweet spot:It might happen as you gaze at a solo performance and suddenly recognize yourself in an overlooked character…Or when you repair an old item and remember a story you’ve never told…Or when you sway to music on a grassy field and share a wordless glance with a stranger…These are not choreographed scenes—they arise because of your participation\, resonating with yourself\, others\, and the world in that moment. \nThis year’s festival features outdoor music performances rich in emotion and bodily rhythm\, a series of intimate solo encounters\, diverse hands-on workshops where your touch brings memory to life through images\, and alternative events such as immersive game experiences and live podcast sessions. These open up more ways to connect—letting the audience experience the rhythm of empathy between creation and participation\, discovering their sweet spot through play and gathering. \nThe 2025 PlayArts Festival continues—As long as you’re willing to place yourself in the mix\, we won’t tell you where the sweet spot is. Instead\, we invite you to tune in and play together. You tell us: what is your Sweet Spot? \nFree Admission｜Open to All \n報名 To apply：https://www.accupass.com/eflow/ticket/2507290758561072737178?utm_campaign=accu_theme&utm_medium=home_north&utm_source=Web \n更多節目資訊請見 For more information\, visit： \n玩聚場藝術節官方網站 PlayArts Festival Website：https://playarts.clab.org.tw/ \n玩聚場Facebook PlayArts Festival Facebook：https://www.facebook.com/playarts.clab
