台灣的客家族群約有四百五十萬人,佔總人口13.2左右。客家文化流傳至今,飲食也融合了來自台灣各地的風土與文化,而在台灣以外的國家,客家飲食也是隨著時間累積發展出當地獨有的客家料理。
Plants團隊這次邀請季風Monsoon的主廚Ted攜手合作餐會,期待與客人們一起分享我們眼中的客家飲食文化。透過這次合作,擁有主持背景的Ted用他專業且生動的詮釋與講解,讓夥伴們了解客家飲食文化的歷史與脈絡充滿了趣味,一些我們習以為常的味道,原來在地球的另一端會這麼的不同。夥伴們也實地走訪竹東客家中央市場,體驗屬於台灣的客家風味。
這次《世界的客家》餐會的菜單,是由Plants團隊以及Monsoon團隊共同創作,客家文化旅行世界演變後,成為創作者們記憶中什麼樣的風味,並賦予其創意的想像。包含7道菜+1杯無酒精飲品,希望大家跟著我們一起體驗植物性飲食所呈現出的《世界的客家》。
Taiwan’s Hakka population numbers around 4.5 million people, accounting for approximately 13.2% of the total population. Hakka culture has been passed down through generations, and its cuisine has integrated local flavors and customs from across Taiwan. Outside of Taiwan, Hakka cuisine has also evolved over time, creating unique regional variations of Hakka dishes.
For this event, the Plants team is collaborating with Chef Ted of Monsoon, aiming to share their interpretation of Hakka culinary culture with guests. Through this collaboration, Ted, who also has a background in hosting, will offer his professional and engaging insights into the history and context of Hakka cuisine, making it an enjoyable experience for everyone. Some flavors that we are accustomed to in Taiwan may taste completely different in other parts of the world. The team also took a field trip to Zhudong Hakka Central Market to experience the unique flavors of Taiwanese Hakka cuisine firsthand.
The menu for this “World of Hakka” dining event is a co-creation by the Plants and Monsoon teams. It showcases the flavors of Hakka culture as they have evolved and traveled across the globe, blending these memories with imaginative creativity. The menu includes seven dishes and one non-alcoholic beverage, inviting everyone to experience Hakka cuisine through a plant-based lens in this “World of Hakka” journey.

Ted
主廚Ted廖永勛在大學時就讀食品科技和釀造技術,作為季風Monsoon的創辦人之一,他的料理風格融合了客家傳統與現代創新,並且專注於純植物性飲食。Ted的經歷相當豐富多元,參與過多項地方創生及社區營造工作,田野調查經驗豐富,他所主持的客家電視台節目《我把旅行變成一道菜》,展現了他對食物的深刻理解和對文化的熱情 ,該節目也獲得了第28屆亞洲電視大獎最佳生活風格節目獎項。
Ted的料理哲學和創作靈感來自於他對客家文化的深刻理解以及對全球議題的關注。他透過季風Monsoon的平台,努力將客家飲食文化推廣到國際舞台上,使其成為一種世界語言。
Ted也曾被《Tatler》、《明潮》和《MM Milk》等媒體專訪報導,並擔任2023台北夜市打牙祭評審以及2024年台灣美食展演講嘉賓,也入圍2022米其林指南推薦和2023米其林必比登推薦。
Chef Ted studied Food Technology and Brewing Techniques during his university years. As one of the founders of Monsoon, his culinary style fuses traditional Hakka cuisine with modern innovation, focusing entirely on plant-based dishes. Ted has a diverse background, having participated in numerous local revitalization and community-building projects, and has extensive experience in field research. His Hakka TV show, I Turned Travel into a Dish, highlights his deep understanding of food and his passion for culture. The program also won the Best Lifestyle Program at 28th Asian Television Awards.
Ted’s culinary philosophy and creative inspiration stem from his deep understanding of Hakka culture and his focus on global issues. Through the Monsoon platform, he strives to bring Hakka cuisine to the international stage, making it a universal language. He has been featured in Tatler, GQ, and MM Milk, and served as a judge for the 2023 Taipei Night Market Feast and a speaker at the 2024 Taiwan Food Show. He was also a nominee for the 2022 Michelin Guide and the 2023 Michelin Bib Gourmand.

Plants團隊由創意總監Lily帶領,善於以植物性、無麩質、全食物的方式呈現料理,使用在地有機、友善食材,與異國料理的精隨融合,也象徵著包容、欣賞不同的文化,讓台灣在地食材與異國碰撞出有趣的火花。開店邁向第九年,繼二年前與台中菜市場主廚Eason合作的《回家》餐會之後,我們這次攜手客家蔬食的推廣大使Monsoon主廚Ted,將會帶各位一起去《世界的客家》遊歷。

The Plants team, led by Creative Director Lily, excels at presenting plant-based, gluten-free, and whole-food dishes, using locally sourced organic and sustainable ingredients. By blending these with the essence of international cuisine, they represent inclusivity and appreciation for different cultures, creating exciting new culinary sparks by fusing Taiwanese ingredients with global flavors. Entering its ninth year, Plants continues its mission of promoting plant-based dining. Following the successful Homecoming dining event two years ago in collaboration with Chef Eason from Taichung Market, the team now partners with Monsoon’s Chef Ted, the ambassador for Hakka plant-based cuisine, to take you on a journey of “Hakka Around the World.”
Delicious × Healthy × Sustainable is the philosophy at Plants. Through the use of ecologically sustainable ingredients, we aim to not only enjoy delicious and healthy food but also contribute to the planet’s well-being. We hope that by embracing plant-based cuisine, we can inspire a movement toward sustainability.
